5.Bind ( गाढ़ा करना ) - किसी चटनी या लिक्विड को गाढ़ा करने के लिये उसमे आटा, अंडा, घी, क्रीम इत्यादी डाल कर हिलाना । To thicken a sauce or hot liquid by stirring in ingredients such as eggs, flour, butter or cream.
6.Blackened - खाना पकाने का वह तरीका जिसमें खाने की वस्तु को तेज आग पर पकाना जिससे उसकी बाहरी स्तह एक तरह से जल कर काली हो जाये । A popular Cajun-style cooking method in which seasoned foods are cooked over high heat in a super-heated heavy skillet until charred on the outside.
7.Blanch( हल्का उबालना ) - बहुत थोड़े समय के लिये फ्रूट या सब्जी को उबालना जिससे उसका छिलका मुलायम हो जाये । उबले पानी में 30 सेकेंड के बाद फल या सब्जी को ठंडे पानी में डालना जिससे पकने की क्रिया बंद हो और मोटा छिलका आसानी से छिल जाये । To boil briefly to loosen the skin of a fruit or a vegetable. 10.Braise - बंद बर्तन में तेल/घी/मक्खन में धीरे धीरे कुछ समय पकाना । मीट या किसी और चीज को तेल, घी या मक्खन में दम दे कर पकाना जिससे वह ब्राउन/क्रिस्प हो जाये और उसके बाद धीरे धीरे लिक्विड में पकाना । A cooking technique that requires browning meat in oil or other fat and then cooking slowly in liquid. The effect of braising is to tenderize the meat.
11.Broil - सीधे गरम आग पर सेंकना । To cook food directly under the heat source.
12.Broth or Stock( शोरबा ) - मीट, सीफूड़, सब्जी, (या उनके छिलके, हड़्ड़ियाँ) आदि को मिला कर स्वादिष्ट सूप तरह का गाढ़ा पीने का पेय बनाना । A flavorful liquid made by gently cooking meat, seafood or vegetables (and/or their by-products, such as bones and trimming) often with herbs, in liquid (usually water).
13.Brown - खाने की वस्तु को हल्का सा तलना या भुनना जिससे स्वाद बढ़े या देखने में अच्छा लगे । A quick saute, pan/oven broiling, or grilling method, done either at the beginning or end of meal preparation, often to enhance flavor, texture or eye appeal.
14.Brush - मीट, ब्रेड़ या किसी खाने की वस्तु पर मक्खन या चटनी आदि की हल्की परत चढ़ाना । Using a pastry brush to coat a food such as meat or bread with melted butter, glaze or other liquid.
15.Butterfly - किसी खाने की वस्तु को बीच में से काट कर चारो तरफ फैलाना / शेप देना । To cut open a food such as pork chops down the center without cutting all the way through and then spread apart.
