Roughly speaking, bacteria lead to caries. Plaque on teeth is a biofilm made up of bacteria. Plaque is formed only due to sucrose, it forms a conditional "house" for bacteria.
Therefore, you can eat sweets without remorse, but after a meal, be sure to rinse your mouth.
